These peanut butter & chocolate holiday balls make wonderful gifts. So easy to whip up and they only require a few ingredients.
Ingredients (yields 50)
2 ¼ cups peanut butter
¾ cup salted butter (melted)
½ tsp. vanilla extract
3 ¾ – 4 cups powdered sugar
2 lbs. Chocolate Chips
Place vanilla, butter and peanut butter together in a large bowl (or stand mixer). Mix well.
Add in powdered sugar, a little at a time. Add enough powdered sugar so that the mixture holds together well. The mixture should form one giant ball.
Cover and let sit in the refrigerator for 30 minutes until they firm up. (You can also cover the mixture tightly and refrigerate for up to 2 days.)
Using disposable kitchen gloves (we recommend Clean Ones Kitchen Essentials Disposable Gloves) shape the dough into 1-inch balls.
Cover and refrigerate again, for about 30 minutes.
Following package instructions, melt chocolate chips using a double boiler (or a microwave).
Dip the peanut butter balls one at a time in the melted chocolate. Let the excess chocolate drip off. Place onto wax paper and let harden.
Refrigerate until ready to serve.
